Almonds & Lemon Cake

My sister returned from hospital after a serious surgery and I wanted to welcome her with the most delicious cake. I didn´t have many ingredients at hand at the time for the previous weeks had been all but relaxed and therefore I hardly had had the time to go to the supermarket to refuel, but I'm a firm believer that sometimes one manages to make little miracles when the causes are this great. This was her welcoming home cake that celebrated this small victory and believe me when I say that it will become one of your go-to cakes from this moment on. Two weeks have passed now since and our friends and family still talk about this cake and my dear sister loved it so much and felt so cheerful about it that it soon became known as the "happiness cake". It must be a good sign, right?

Ingredients: 
  • 6 eggs 
  • 250 g flour
  •   200g almond powder
  •  250gr sugar 
  •  zest of 1 lemon
  • 80ml liquid  butter
  • red fruits mix + cream with lemon juice [for topping]
Since I had almonds at home I had to  grind them to turn them into powder. In a bowl whisk the egg whites and set aside. In another bowl whisk the egg yolks with the sugar, the lemon zest and butter until a creamy. Then add  the flour and almond powder for 3 times mixing with a wooden spoon. Finally, add the egg whites. Place on a mold greased with butter and sprinkled with flour. Tke to a preheated oven at 180 degrees for about 45 -50m.

Ingredientes:
  • 6 ovos
  • 250gr farinha
  • 200gr miolo de amêndoa
  • 250gr açúcar
  • raspa de 1 limão
  • 80ml manteiga líquida
  • frutos silvestres + natas com sumo de limão [para a cobertura]
Como usei amêndoa palitada tive de a triturar. Numa taça bater as claras em castelo e reservar. Noutra taça bater as gemas com o açúcar, a raspa do limão e a manteiga até obter um creme fofo. Adicionar depois por 3 vezes a farinha e o miolo de amêndoa  envolvendo com uma colher de pau. Finalmente, adicionar as claras em castelo. Colocar numa forma untada com manteiga e polvilhada com farinha.Levar ao forno pré aquecido a 180º cerca de 45 -50m.
